Spanish Coffee
This particular drink takes lots of practice to get right and is pretty
dangerous to boot. It involves the use of an open flame. The glass gets
very hot & can burn you or break. The alcohol you're adding can catch
on fire, the fire can run up the stream, into the bottle, and the bottle
can explode. You can spill alcohol on your hands, arms or clothing and
that can catch fire, too. Why take the risk? Simply said, the end result
is a spectacular show & a taste treat that's truly unforgettable ...
you just have to be careful.
Coat rim of glass with lime juice and dip in sugar. Pour half a shot
of 151 rum into bottom of glass. Swirl. Carefully ignite rum with a
match & continue to swirl in bottom of glass. Add one shot dark rum.
Add half a shot of Kahlua, Tia Maria or other coffee-flavored liqueur.
Add a splash of triple sec. When sugar on rim begins to bubble, set
glass down & sprinkle with cinnamon & nutmeg, then fill to 1/2" from
rim with hot, fresh coffee. Top with whipping cream and serve. Note:
if adding the coffee does not extinguish the flame, suffocate it by
placing the bottom of the coffee pot on top of the glass until the flame
goes out.
